20号 第三次做蛋糕卷【抹茶味】

这次刚买了抹茶,然后想做个抹茶味的蛋糕卷。

上次第三卷还可以,所以这次也是第三卷素材,然后加了点抹茶粉,没多大分量。

和第三卷一样,第一遍150烤40分钟,然后发现底层不熟,再烤10分钟上层140,下层180。

优势:

1.小三卷的比例很准,都是30g。

2.可能柠檬汁放的有点多,全程高速播放,所以时间过的比较快。半个小时都不如以前了。

3.将三分之一的蛋清和蛋黄混合后,在将混合物倒入蛋清时,空碟倒在这里,而不是直接倒在蛋清上面。

缺点:

1.底部加了个底盘,导致下层烤久了不熟。

2.蛋清很老,蛋清很粗糙,一点光泽都没有,导致一个卷上市,一个卷上市,根本没有办法滚下来。

3.由于抹茶粉的加入,没看视频的人占多大比例?有点盲目。

4.当蛋糕从烤箱中出来冷却一段时间后,立即用油纸盖上,然后翻面。这时候用油纸粘着。我看视频,然后等5、6分钟再翻(下次试试)。
